Easy Whipped Beet Dip with Feta, Goat Cheese, and Dill
This vibrant and creamy Whipped Beet Dip is the perfect blend of sweet earthy beets, tangy feta, smooth goat cheese, lemon, and fresh dill. It comes together quickly in a food processor and makes a stunning appetizer for parties, girls’ nights, or healthy snacking at home.
Optional: lemon zestextra feta, extra dill for garnish
Instructions
Cook the beets: Boil whole beets for 50–60 minutes until fork-tender. Rinse under cool water, peel, and chop into chunks.
Blend the dip: Add chopped beets, Greek yogurt, feta, goat cheese, olive oil, and lemon juice to a small food processor. Blend until smooth, scraping the sides as needed.
Add the dill: Stir in fresh or dried dill. Taste and adjust lemon, saltiness, or herbs if needed.
Serve: Transfer to a bowl and top with extra dill, feta, and optional lemon zest.
